Buttermilk Almond Cinnamon Pancakes

If there’s something you don’t know about me, I love pancakes! And cinnamon! It’s such an easy dish to make and great for breakfast. I found an easy recipe online for buttermilk pancakes from allrecipes.com. I’ve added a few ingredients of my own during the process of making these.

Ingredients:

  • 3 cups all purpose flour
  • 3 tbsp white sugar
  • 3 tsp baking powder
  • 1 1/2 baking soda
  • 3/4 tsp salt
  • 3 cups buttermilk
  • 1/2 milk (I used almond instead)
  • 3 eggs
  • 1/3 cup butter, melted
  • cinnamon spice
  • 2tsp vanilla extract
  • 1 tsp almond extract
  • spraying oil (I used coconut oil)
  • 1 cup brown sugar
  • piping bag (you can use a ziploc bag instead)

In a large bowl, combine flour, sugar, baking soda, baking powder, and salt. Then mix in buttermilk, eggs, melted butter, milk, vanilla extract, almond extract.

In a separate small bowl, melt brown sugar. Then sprinkle the amount of cinnamon you would like for that cinnamon flavor. Then put it in a piping bag.

Heat up your skillet/griddle that’s already oiled. Scoop batter with a spoon into the skillet/griddle. Then get your piping bag that is filled with the melted sugar, put some swirls on the pancake. Once you see little bubbles on the surface, flip!

Optional: you can top it with any kind of fruits you’d like with whipped cream, and syrup.
